Quick! The apples you see at the farmers market won’t be around much longer! Buy a bunch this week and make some applesauce. It freezes really well so you will be thanking yourself in February when you make your favorite pork chops (and who doesn’t have favorite pork chops?). You will be amazed how easy this recipe is. You can also add other spices like cloves, cardamom, and ginger, for more complexity.
Simple Applesauce
4 pounds apples (8-12 medium), peeled, cored and cut into 1 ½ inch pieces
¼ cup sugar
Pinch table salt
1 cup water
¼ tsp ground cinnamon
Toss apples, sugar, salt, and water in a large heavy bottomed nonreactive Dutch oven. Cover pot and cook apples over medium-high heat until they begin to break down, 15-20 minutes, checking and stirring occasionally with a wooden spoon to break up any large chunks. Season with cinnamon, and extra sugar if desired. Serve warm or chilled.

Well, I missed a day. I am sorry about that, friends. My parents are here and it’s the first time they’ve been to our home, so yesterday was spent celebrating my new job (!) and then preparing for my parents to arrive. And I did not have time to blog.
But now they are here and resting after their travel day, so it’s time to talk about the delicious pork loin and applesauce we made for Sunday dinner last weekend.
This is a very simply – but very well – seasoned pork loin. It was savory and spicy because of the coating of black peppercorns and red pepper flakes – a perfect compliment to the applesauce. Then we topped it crunchy and sweet caramelized onions. I think Dave put it well when he said that pork is amazing because it has so much flavor of its own; you merely have to compliment it slightly to make the perfect piece of meat.
