Q. What are some of your favorite fresh vegetables in season right now that you look forward to cooking with and why?
A. I love to cook with zucchini this time of year. It's hydrating for the body and so versatile. And it grows like a weed! A friend of mine literally just gave me a 2-foot zucchini, and I made stir fry and soup with it! It went a long way.
Q. How about fruits?
A. Cherries and nectarines this time of year are my favorite. I love to make cobblers out of them using no refined sugar. You don't even need sugar, because they are so sweet. Cherries are great in smoothies, too!
Q. What are the best cooking methods for each of your favorite fresh vegetables (i.e. pan searing, steaming, blanching)?
A. I stir fry mostly, because it keeps veggies crisp and flavorful. I like to use different health oils such as coconut or sesame oil for flavor.
Q. What are some favorite flavor combinations you enjoy creating with vegetables (i.e. in pairing vegetables but also in cooking different types of vegetables with oils and herbs)?
A. I love to use any kind of fresh herbs, but mostly thyme with veggies. Zucchini white bean soup is one of my absolute favorites because it's flavorful, easy to make and high in protein.
Q. West Tennesseans tell me often that they enjoy grilling fruits, such as peaches and pears. Which fruits are best for grilling, and what is the process?
